CREAM CHEESE & PICKLED CUCUMBER

Pickled cucumber is a fantastic aid to a grilled cheese sandwich. They bring crunch and a burst of sour juice, which sits ever so well with creamy cheese. Try this on for size.

PREP TIME :

12 minutes

COOK TIME :

2 minutes

TOASTING METHOD :

BEST BREAD :

rye or rye sourdough

2 slices rye bread or rye sourdough bread

2 tbsp cream cheese

a few dill fronds, to serve

freshly ground black pepper

PICKLED CUCUMBER

2 tbsp rice vinegar

1 tsp maple syrup

¼ cucumber, sliced

To make the pickled cucumber, mix together the rice vinegar and maple syrup in a small bowl. Submerge the sliced cucumber in the pickling mixture and leave for 10 minutes.

Toast the rye bread in a toaster until it’s nice and crunchy.

Working quickly, spread the cream cheese over your slices of toast, add the sliced cucumber and sprinkle with the dill. Crack over some black pepper and serve.
